I replied on the other thread, but yes. Lovin' them. Seriously, though, I wouldn't spend a lot of money on knives until you follow c-dub's advise to test drive them. I went in expecting to buy something completely different from what I ended up liking. |

In Kitchen Confidential A. Bourdain talked about a "Z" shaped knife used for slicing veggies. Anyone know of a good source for these? |

Shane, You don't really need to work with them to try them out. Just hold them. Squeeze them tight, to try to emulate what they might feel like after 10 minutes of cutting. That's what directed me to the Grand Prix II line. They're nice and rounded with no hard edges to dig into your hands. Places like Bed Bath and Beyond, and Linens and Things should have some of the big brands. |

Wusthof rules! They're good if you're a big oaf like me. If you're ever in my house I'll let you handle my rock-hard 10 inch heaviness.
Yeah you don't have to break down a case of chickens or anything. If all you can do is hold a knife in your hand and wave it around like a sword then it's better than nothing. That will let you at least know if it feels like it will rub a hole in your thumb. If you have to settle I'd say go for the cheapest one you like. That way if it's a bust you aren't out big bucks. |

I've have a German made Henckels for ten years that I've used exactly once. The blade, right out of the box was horribly finished and shaped. The heel, the most important part of the blade (the flat area nearest the handle that makes flush contact with the board), is NOT flat. If you press it down flush to the board, you can see light coming through from the other side because of it's concave fucking shape. I remember chopping green onions or something and realizing that the were all stuck together and weren't getting cut all the way through. I was like, WTF? That's when I saw it. I also noticed that the whole thing was horribly and hurriedly finished looking. Don't ask me why I never took it back or fixed it. I threw it aside and never touched it again. I'm moving very soon and will be leaving all my kitchen stuff behind, so I'll be in the market for all new knives once again...good thread. |

Dang! Already one problem... As I was using it last night, the power went out in our neighborhood for about an hour. I fumbled around and rinsed the knife and set it on the cutting board (without wiping it down). Then I went looking for a candle and eventually sat to eat (the steaks had just finished before the power went out). But by the time the power came back on, I already had permanent discoloration on the knife from not wiping it down (because of the high carbon content I'm assuming). Shit! |
