Red Dye #40 rules! Thanks for posting the pics, Moke. Anyway, I smoked Moke's recipe chicken with frozen concentrate, and it worked well. The frozen limeade/lime vinaigrette had a nice taste, although it gave a much lighter taste than I expected. (edit: weird, I just sat down and had some more, and the lime taste was much stronger.) I'll do it again, but like Moke I'd probably put some much hotter ingredients in it also, and maybe something like a smashed up mango. (I also did a batch with my typical rub.) On the smoker (that little blob was a garlic head, thanks for the idea Samiclaus). Smoked garlic Putting the chicken over coals after smoking to crisp up the skin. |

I made one tonight with:
About 5 pounds boneless skinless thighs.
One half can of lemonade concentrate.
About the same amount of shoyu.
One half of a mashed up papaya.
A bunch of chopped up green onions, garlic, and thai basil.
A bunch of this:
And some sea salt.
I'll make it in the next day or two and see how it comes out.
In the meantime, I bought a big flat rectangular cast-iron grill top today. One side is perfectly flat, or you can flip it over and use the other side which has raised ridges for scoring. I'm going to try use it on my propane grill since that thing is sucking as it is.

the mashed up papaya or mango will soften the hella outta your meat--especially the papaya. can't soak too long in that, or soak in all the other ingreedaments and then add that stuff for the last 4 hours. BUT, kiwi is the end-all of meat tenderizers. holy shit |

I only added the papaya because I wanted to test and see if you'd be able to taste it at all being that papaya is so subtle. btw, Ulrik Helgstrand does look like he fucks chickens...a lot. |

Moke, you are the man. I'll try the chili paste next. You know, if you've got an old charcoal kettle grill, you can smoke ribs and chicken easily with it. I do it every once in a while. You just have to set it up for indirect heat. I use a couple of fire bricks (not regular bricks) underneath the cooking grate to partition off the coals and a brick over the coals, and it works great. It is something like this, except next to the coals I stack the bricks, and I use a third brick instead of a water pan. www.thesmokering.com/HowTo/weberribs/default.jsp Crap, I don't think that makes any sense. I made the chicken tonight and it was fine. No you can't taste the papaya, but like FCTV said, it made the meat so soft, it was hard to flip them with them falling apart. I was also on a Thai basil kick, but that has run it's course. Not sure what direction is next. But I still like citrus in the background and it can be made subtle or more pronounced, so I think I'll keep that part going. |

be careful w/ papaya and kiwi and banana--creepy what they do to meat. and if you eat too much meat in a short period of time, you wind up spending way too much and buy something like this on a whim:
although it would compliment your bbqs and chicken and stuff...

I needed an acoustic that would come close to feeling like an electric that I could play around the house without plugging in. Brand was zero consideration. Only access and neck feel.
I bought this Korean clunker because of the overall feel and the cutaway. Then I took it straight from the store to another shop where my friend is a guitar tech, and she pulled out the saddle and shaved down the entire bridge, replaced the saddle with a lower profile bone, then did a fret dressing on it to get the action low and electric-like.
Ahhh, guitar, chicken and rice...what else is there?

I'm marinating my lunch right now - chicken breast marinaded in Lottie's Barbados hot sauce, some dijon mustard, a smashed banana, and (not pictured) a little allspice I don't quite know why I added the banana, but I thought it would aid in the carribean-ish style of the marinade. Lottie's is hot as fuck, so I expect to be shitting blood later on. I plan on leaving a good bit of the marinade on when I toss it on the grill later. EDIT: This was the finished product.... ![]() It came out nice and moist, with a bit of a kick from the habanero sauce. The slight banana aftertaste was kind of gross though - I didn't think you'd be able to taste it with such pronounced flavors in the hot sauce and dijon. |
