I'm thinking of making a New York Style pizza. Got any good recipes for pizza sauce? I want to be able to taste the sauce, not like what you get at Pizza Hutt where you can't even taste the sauce. |

pizza sauce = tomato sauce, imo. make a tomato sauce and spice/herb it up to your taste. |

It's all about the ingredients. You don't need a fancy recipe. Go to whole foods (or the equivalent) and buy a big can of San Marzano tomatoes, some organic, local garlic, and some organic unfiltered EVOO. Mince the garlic. Over MEDIUM-LOW heat, gently warm the garlic in a few tablespoons of olive oil for about 10-15 minutes (don't allow the garlic to take on any color), then add the tomatoes. Increase the heat slightly. OPTIONAL: if you like a sweeter sauce, add a teaspoon of white sugar at this point. Gently simmer for about 10-15 more minutes. Turn off the heat. Season with salt and freshly ground black pepper and a little more oil. You'll have a lovely, intensely tomato-y, garlic-y sauce. |

Okay, so I make everything in batches that are too big... 2 can San Marzano tomatoes 1/2 cup red wine 1/2 shallot (minced) 2 cloves garlic (minced) 3 basil leaves (minced) 1 Tbsp minced fresh oregano 1 tsp minced fresh thyme Reduce the shit for an hour or so. |
