Ingredients

1 lb. fresh pork roast - Cubed

1 can Ro-Tel Diced Tomatoes and Chile Peppers

1/2 cup Roasted green Chile can be mild, Medium or Hot.

6 Medium Potatoes diced 2 inch squares. with or without skin

1/2 Tsp Garlic
(You May reduce Garlic to up to 1/3 tsp)

Salt to taste aprox 1 tsp

1/3 cup Onions (optional)
onion salt or powder can also be subtituted.

Water



Directions
Combine all ingrediance in a crock pot
Fill Crock Pot to an inch from the top with water.

cook for 6 hours.

Number of Servings: 8

 Made some cider braised short ribs this weekend.  They turned out pretty tasty for a first run.  I'll make some adjustments on the recipe next time around.

As far as cooking on low vs. high, does it really make a difference or is it simply a time issue?

It definitely makes a difference in the tenderness factor. Also stuff turns out less dry tasting. At least that's my experience.

crunchysavior is correct. Low and slow will break down the connective tissues more if you do it slowly, thus resulting in a more tender piece of meat.
