Food & Wine Ground >> Any Thai food cooks?

Tried my first thai dish tonight: ga prao with ground chicken and mushrooms. Came out decent, I was scared of the thai chills, so I didn't use enough and there was almost no heat whatsoever. I also think I used too much garlic. Also, the chicken was a bit dry when I finished. This is possibly due to me using ground chicken breast (almost no fat) and/or not using enough liquid while cooking. Anyone here experienced with this dish? Looking for some tips on the best meat/ingredient ratios for a nice flavor balance? For reference, this is the recipe I used: http://www.realthairecipes.com/recipes/stir-fried-pork-with-holy-basil/ Oh, and I had to sub thai basil for the holy basil as I couldn't find it. I doubled everything, but used a full lb of chicken which I think was what really screwed me up. Thanks guys. |
