damn, i love that stuff. i made me some yesterday: 1/2 green pappaya (can be bought at asian supermarket) 3 long string bean (can be bought at asian supermarket) 1 tomato 2 chillies (or more if you like it spicy) 1 clove of garlic 1/2 lime 1 tbsp of palm sugar 3 tbsp roasted peanuts 2 tbsp of fish sauce take a mortar and pound the chillies and garlic to a paste. add lime juice and palm sugar and stir. cut the green pappaya into really thin long strips (i use a potato peeler to make fine strips and then cut those). cut the green beans into pieces and add to mortar and pound them some too. then the pappaya strips cut up tomato and fish sauce, pound some more and put the cut up peanuts to the mix. ready to serve |

IMO papaya is too dry, so instead I use cucumbers. I've been eating this as a kid, as my parents grew up in thailand, but I don't know how some asian girls can eat so much of it. |

Adding in fish sauce and everything else makes it juicier, but im talking about the texture of the papaya. I'm telling you, making it with a cucumber makes a HUGE difference. But congrats, the way you make it is pretty much spot on. |
