Recipe appeared in my local paper today... 5 lbs wings 4 Tbsp kosher salt 4 Tbsp Sriracha 2 Tbsp honey 2 Tbsp butter, melted 1 Tbsp soy sauce 2 Tbsp chopped cilantro Coat wings with salt, place wings on cookie sheet, cover w/ plastic wrap, place in fridge (salt draws out moisture, tenderizes and seasons) Remove wings from fridge, pat dry and remove excessive salt. Let sit at room temp for 15 min. Whisk together Sriracha, honey, butter, soy sauce & cilantro & hold. Deep fry at 275 for 8 minutes... heat oil to 375 and cook wings for additional 2 minutes. Season w/ salt & pepper, place wings in bowl and toss with sauce mixture *Cook wings in 4 separate batches* |

I have never seen the double frying method used before, except for pomme frites. According to the article, they "borrowed an Asian technique for frying chicken twice." |

looks pretty good but for the home cook, altons wings crush just about anything else |
