I just sort of made this up because I didn't have a lot to work with. I cubed 3 chicken breasts for kabobs and I made a marinade with:
2 cups of orange juice
3 tbsp soy sauce
4 heaping tbsp peanut butter
2 cloves of garlic
1/2 of a medium red onion, minced
a couple dashes of worcestershire
4 tbsp BBQ sauce
several grinds of black pepper
I mixed it up well and dumped off about half of it in a small pot and put the rest with the chicken in a ziplock for a couple hours. (you don't need that much marinade since the chicken is cubed) I added about a couple ounces of ketchup, another couple ounces of BBQ sauce and a couple pinches of red pepper flakes to the pot and simmered that on low during the 2 hour marinade. Grill the kabobs as usual and apply the sauce a couple minutes before removing.
Anyway, I thought it turned out pretty damn good. I had to use some premade BBQ sauce as a suppliment because I didn't have everything to really make one from scratch. The peanut butter is subtle, but it adds sort of a vague nuttiness, which was very interesting.
