well if you fried that w/ a little oyster sauce and had lup chong sliced thinly and fried into it--that is of course after you started teh whole dish by frying minced bacon first right?--then you will have achieved perfection.

i think squirrel is making a come back due to their nutty flavor. I would kill a couple when out bird hunting, but always gave them to my grandparents. Always thought of them as tree rats.

Moke - I've been brining and roasting butterflied chickens just like that lately.

Did you make that in your smoker?
There's a local place that does red beans and rice and fried chicken..the chicken is breast/white meat and super juicy..the only way I can figure they get it that way is to brine it. Phone Post

I cooked them in a soy based ginger sauce and rice wine. Bout 20 garlic clove were in the braise that I mushed up and added brown sugar to for the glaze. I brushed them 3 time to get a good crust. Phone Post
