Weird, in Mozilla, some of my photbucket pics aren't showing up in the thread. Those chicks just look/seem nervous. They are squeezing their legs together to keep the moisture from running down their legs, giving them away. Now's the time to strike! *tears off a strip of duct tape*

Since it is getting close to Thanksgiving, I thought I'd give shoyu turkey a test. I took FCTV's basic shoyu recipe--since it is by memory, I may have messed it up a little--one cup honey, one cup red wine vinegar (or beer or wine), one cup shoyu, a bunch of garlic and ginger, and some bay leaves and peppercorns. I forgot the kiwi. I probably used about a gallon of brine mixture. http://i202.photobucket.com/albums/aa34/sporkticus/IMG_2040.jpg http://i202.photobucket.com/albums/aa34/sporkticus/IMG_2043.jpg I brined the turkey breast overnight (17-18 hours) and threw it on my smoker. http://i202.photobucket.com/albums/aa34/sporkticus/IMG_2049.jpg On the bottom rack, I did shoyu chicken! http://i202.photobucket.com/albums/aa34/sporkticus/IMG_2065.jpg Done. http://i202.photobucket.com/albums/aa34/sporkticus/IMG_2057.jpg http://i202.photobucket.com/albums/aa34/sporkticus/IMG_2067.jpg http://i202.photobucket.com/albums/aa34/sporkticus/IMG_2074.jpg (it looks much pinker in real life, weird) http://i202.photobucket.com/albums/aa34/sporkticus/IMG_2080.jpg It came out very juicy and everyone loved it, so I probably will smoke shoyu turkey and brisket this year for Thanksgiving. Thanks for the idea FCTV!! Edit: the turkey breast was minimally processed with water. You don't want to brine a turkey that already has a 7-10% solution of salt in it, because it will be much too salty (so check the label).

holy moly sporkticus, u r a master smoker. interestingly enough, by replacing the beer or wine w/ vinegar, it's more of a filipino adobo which is awesome too!

Can you believe of all the years I spent in LA, and all the years I walked past those places in Hollywood, I never ate from the meat tornado? Dang. Sami, there's a place I shop at here, and in their meat department, the number one and most abundantly supplied cut is chuck eye. No more hunting it down or guessing which stores might have it on hand. Woo-hooo!

What the hell is in those giant meat cones anyway? Or am I better off not knowing? It (the 'meat tornado') is shawarma. It's a middle Eastern specialty. If it's authentic it's either goat or lamb.
