Really cold one day and I went to start my bike and the top of the choke lever broke. Where can I find a replacement online? Also, what do you guys do before storing your bike in the garage for the winter?

Fuel Stabilizer, Battery Tender, a good wash and wax, and get the tires off the ground so you don't have any dead spots. Also put a piece of steel wool in your exshaust so no mice can nest. And don't start it till spring.

When I was home in Ireland, we just rode through winter:-) That said, disconnect your battery or attach a trickle charger and put the bike up on paddock stands to avoid any posible flat spotting of the tyres.
