I mostly use oak and hickory to smoke with - sometimes I throw maple and apple into the mix to lighten the bitterness you can sometimes get by just using hickory

I love it but after it comes out of the oven my kitchen smells like stale garlic for daaaaays.  It smells like someone forgot to deodorize.  I'm doing the smoke.  I'll cover it with foil after a bit, hopefully that will prevent the bitterness of my only using hickory.

Good stuff! I cut the tops off after roasting. I use a little olive oil on top, some Himilayan sea salt and a little course ground black pepper. I use it on all sorts of stuff as well, but it really does wonders for chili.

I usually make mine in the BGE with just lump charcoal so it won't stink up the house. I'll have to try the smoke thing. I haven't had much luck smoking vegetables, so I never even tried it.
