Got a bit bored and decided it was a good time to make some soup. some green onion, milk, butter, cubed potatoes, celery, black pepper, and chicken broth. Would've been made perfect if I had some bacon but it is pretty damned good as it is.

went by this but didn't use a processor or blender because I like it a bit chunkier. this makes about 5 portions.

INGREDIENTS
2 tablespoons butter or margarine
4 green onions, sliced
1 stalk celery, sliced
1 3/4 cups Swanson® Chicken Broth (regular, Natural Goodness™ or Certified Organic)
1/8 teaspoon ground black pepper
3 medium potatoes, peeled and sliced 1/4 inch thick
1 1/2 cups milk

DIRECTIONS
Heat butter in saucepan. Add onions and celery and cook until tender.
Add broth, black pepper and potatoes. Heat to a boil. Cover and cook over low heat 15 minutes or until potatoes are tender.
Place half the broth mixture and half the milk in blender or food processor. Cover and blend until smooth. Repeat with remaining broth mixture and remaining milk. Return to saucepan. Heat through.

Potato Soup is great, one of my favorite dishes from the old country. Of course it's better with Bacon, but my missus is Muslim so I don't get to add the bacon anymore :( DROC

LOL she's 7 months pregnant so there's no escaping now. In her defense, she still cooks me full Irish Breakfasts, Bacon, sausage and all, sometimes. DROC
