Some recent things that I've cooked that went over very well.
1. Cornish hens stuffed with sweet potato and parsnips.
Buy one cornish game hen (preferably organic) per guest.
Wash and pat dry with paper towel and remove any excess fat from the cavity.
Cut up sweet potato and parsnips. Boil until nearly cooked.
Remove and allow to cool. Toss with corriander, pepper, olive oil and any other spices you like.
Put rub of your choice on the hens. Stuff full with sweet potato and parnsnip chunks.
Place on baking sheet(that has been lightly oiled) breast side up and surround with remaining root veggies.
Bake at 425 for about 40 minutes then put a slice or two of bacon over the breast and cook for another 15 minutes or so.
2. Shrimp Pasta in white wine sauce.
Put 2 tbs of butter into a saucepan. Add onion and sliced red or orange pepper. Cook until soft. Add 1 cup of white wine, sage, cilantro, and other spices of your choice and some olive oil. Simmer for 15 minutes. Add one small chopped tomato (peeled and seeded) and shrimp. Shrimp should be cooked in under 5 minutes.
Cook pasta (I prefer organic buckwheat pasta) in water with a touch of oil until tender. Drain and toss with sauce.
