gumbo is so easy to make if you have the patience to stand there and deal with the roux.

get a chicken and some sausage and try it.

first while your heating the oil, season the meat with some cajun seasoning

heat 1 cup of oil over med high heat and brown the rabbit or chicken then set it aside

 

lower heat to med and add one cup of flour to the oil to make the roux.  you have to stand over it slowly and constantly stirring it until it darkens.

 

this is about 25 minutes later

 

 

add 2 cups of chopped onions, 1 cup chopped celery,  1 cup chopped bell peppers, some fresh chopped garlic, and your favorite hot sauce.  cook until the vegetables are soft.

add 4 bay leaves, salt, pepper, ground cayenne, 1 pound of smoked sausage, the rabbit or chicken, and enough chicken broth to cover this mess.  bring it to a boil, lower the heat and cook it until the meat is tender. 

take out the bay leaves and serve it over rice with french bread.

anyone else do any coon-ass cooking?

Sounds good. I've only made Gumbo with the Zatarain's things.

you don't even know.  you'd be amazed at how good you can make something taste with just a few fresh ingredients.  using that trinity, i could make my sandals taste good. 

seriously, go get some stuff to make this.  use everything fresh, including the garlic, and take your time on the roux.  also, get a whole chicken, either cut up or cut it up yourself.  when the meat is falling off the bone, use tongs and a fork to strip all the meat off.

made some red beans last night with some ham hocks and hot sausage that'll make you punch yo mamma.
