Whats the best way to get (really)crispy fries out of a deep frier?

Deep fry them twice, and then use the basket to take them out.

blanch fries at 300 for 8 minutes, let dry then fry again

When you pull them out, let them cool on a rack, not on paper towels.

Just made some tonight... turned out fantastic.


Peel potatoes and cut into 3/8 fries.

Let soak in water for about 20 minutes.

Preheat fryer to 280 and cook fries until they become a little translucent.

Remove from oil and preheat to 375.

I usually finish the entree (tonight bbq chicken) and drop fries into hot oil until golden brown and crispy (takes only a couple minutes). Drain, salt and eat!

I have seen on the food network the one guy boiled his fries in water first.

Let them dry and then stuck them in the fryer.

Doesn't double frying them make them extra greasy though? I mean we are splitting hairs here I guess...they are french fries.

A lot of French restaurants twice fry their french fries and they're usually not overly greasy.

Want to hear something weird?  If you microware leftover french frys for an unbelievable amount of time (like 5 minutes), they will get perfectly crispy again.  My dad discovered that like 20 years ago and it really works.

Yeah, as long as you eat them while they are still warm, they are file.  If they cool off completely, they will get hard.

I think that's just from lack of water, though.. I wonder if you could dunk them in water before you microwave them or something.

Doesn't just tell you what to do. It explains why.
