It's probably every bit as greasy as any other way to prepare the sausage, but it doesn't taste that way at all.

I make a few before each fishing trip. We snack on it like we would beef jerky.

 I may try it if its not as greasy.  Makes sense though...  the slow n low method probably cooks out alot of the fat I assume.

I'll be sure to double up on Zantac if I do.

They're really good. I make them often. I just ran out a few weeks ago.

I use a little hickory, and smoke 'em til they have about 50% granny skin, then freeze 'em.

 The fatties I've made had about the same greasiness and consistency as summer sausage.  More tender but that same meat/fat ratio and texture.  That same sausage out of the pan for breakfast seems way greasier.

Price really isn't a big problem.  I get my meats from Detroit's Eastern Market where shit is cheap as hell.  I got my baby backs for like $1.69/#


$1.69/lb? Jesus Christ with a hockey stick! Walmart has Back ribs on sale a $3.00/lb, and my local grocery store is $15.41/kg, roughly $7.00/lb. Admittedly Canadian prices, but fuck!

What kind of prices the rest of you guys pay for ribs?

Deer tenderloin is awesome wrapped in bacon. We marinate it in Moores or Johnny's overnite then drain the next day and sprinkle with old bay or morton's and wrap with bacon using toothpicks. It's great. But I would suppose anything with bacon would be.

Its at Eastern Market in Detroit, which is basically wholesale prices.  Its a madhouse - next time I am there, I'll get some pics.

I am doing brisket this weekend.

I just love it. I already smoked some venison Jerky from a Jalepeno marinate. awesome...Cannot wait to do my pork butts and smoked salmon,ribs, venison franks, venison summer sausage...etc :).

3 pound Brisket with fixings will probably feed 6 people, but I always make more then is needed in fear someone won't get enough to eat.

They sell them smaller at the Rainbow stores here in Minneapolis but yes, I can see the dilemma buying one from a butcher.

Where you seeing baby backs for $1.69? I go down there a few times a month, and never seen them less than $3 or so.

 Correct.  I was a tard and was looking at spare ribs.  I had a contact buzz from the pork.

Please ignore my dumbassness.

I did get a nice cantaloupe, purple cauliflower, 2 lbs of strawberries and 2 packages of blueberries for like $7.
