 I picked up some really nice boneless center-cut chops from Costco last weekend.  I am gonna put 4 in the smoker when I get home today.

I will use a simple dry rub of brown/white sugar, paprika (hot, mild and spanish smoked), cumin, garlic, dry mustard, etc and maybe a little mop of apple cider towards the end.  I am gonna use mostly apple, with a little mesquite and alder thrown in.  I'll let you guys know how it turns out.

And I am gonna smoke a fattie too, based on you's guys recommendations.

 Very little mesquite, or it'll taste like paint thinner.

I love pork chops pretty much any way but boiled. Try brining them. You can really put some flavor all the way through them and they'll really resist drying out as most chops don't have much fat to protect them.

 Yeah, they got a bit dry.  Not much fat on them, unfortunately.

I left them in and went to the gym and that dried them out.
