If you are baking a pie with fruit in it, don't put it right into the fridge after taking it out of the oven, even if you are eating it the next day.  It has to sit out for a couple hours first.  There's something about the cooling process that has to take place very slowly, or else when you take it out of the fridge and it warms up to room temp, the insides will turn to liquid.

I ruined an apple pie last weekend.  Oh well.

Turned liquid as in didn't set or turned liquid as in the apples dissolved?  

BTW I still would have eaten it.

didn't set.  It seemed like it did when it was in the fridge, but after it thawed, it fell apart.
