gonna make smokers out of them. I've read a whole shit ton of plans and a 100 page thread on BBQ Brethren on different build styles. instead of building my own coal basket on the bottom i'm gonna try to use a little hibachi grill.

First one should be finished sunday so i'll take pics.

each one should cost me arounf $70 bucks to build and should be able to smoke about 6 pork shoulders at a time.


anyone ever build one of these before?

i checked out a few designs sami. the over under was really cool and i thought about doing a grill as well however i dont weld or own a cutting torch so i'm just going with the basic uds design for now.

what do you think of the mini kettle grill in the bottom instead of the coal basket?

Like a smokey joe? That would probably work fine. You could buy a charcoal basket from a pit builder. I have one from Klose.

yeah i got the thermos version of a smokey joe for like $15 bucks. went to lowes today and got 2 weber replacement grates for less than $30.

is that charcoal basket for your grill?

I'm gonna do one more burn in the barrel and then put it all together this weekend.

That charcoal basket is identical to the one that came with my BYC. If the grill you have has any plastic/ wooden parts, you might want to strip them off.

i did some modding to the grill last night- trimmed the legs, drilled some holes for ventilation in the bottom and added an eye hook so i can take it out of the drum with a fireplace poker. no plastic handles. came out pretty sweet. now i jusy have to jack someone for the lid to thier weber kettle..

yeah gonna fire it up tonight and do a practice run with some sausages. i'm embarrassed to say that i've got no experience with charcoal or fire management.

i've got ribs, loins and some chuickens to smoke on sunday or monday.

i've got some plain old kingsford briquettes - i read that they're easier to control than natural lump.

i'll be smoking with hickory chunks.

Probably too late to mention this, but usually a good idea to do a dry run first with no food....burn out all the residue and other things left from the construction.

Hope all goes well, looks awesome.

It looks like it would be pretty easy to add another thermometer, maybe one on the lid or a bit higher up? The one on now looks to be right on top of the fire, so may not be the most accurate. Just thinking out loud, but good job no matter.

i did 2 burn outs and 2 burns with just charcoal to cure it so theres not really much left on the inside.

the thermometer is about halfway between the coals and the first grate, i have another instant read that i drop in a hole in the top.

the lid doesnt give a snug fit so my temps are not holding steady right now :(

Find a used Weber on Craigslist for the lid. Buy some high temperature rope if your barrel is out of round.
