I've got a fresh Berkshire picnic ham and need some suggestions, and/or recipes for its use.
I plan on simply smoking and pulling the butt that came with it, but I'm less settled on what to do with the ham. I've thought about a mock porchetta, or pernil and I could of course just roast it with some garlic and herbs, but I'm looking for additional suggestions from anyone who has more experience with this cut.

if you're not going to cure it yourself then pernil reall is the king shit here
