Never cooked one, never ate it for that matter but looks good.
Has anyone ever done one? What kind of pan? Any other must do's or no-no's?

You need a paella of course! Not a paella pan, that would be a pan pan. I think this was Good Eats' last episode subject. He went through the whole process. It might have been a little more involved than it needed to be but the basics were all there.
Do you have any saffron? It's more valuable by weight than gold yanno?
