Think of tempeh as a meat in a dish. Let's do a stew. Brush tempeh with oil on both sides and sear in a cast iron skillet. Cool and cut into stew sized cubes.

Melt butter in a soup pot, Add diced onions/leeks, minced garlic salt and pepper. Sweat for 10 mins. Add chopped celery and carrots, cook for 5. Hit it with tomato paste and mix, add 1 cup french lentils, 2 T thyme 1/2 cup farro and 1/2 cup red wine. Stir and cook till wine reduces by half. Add tempeh, add 1 qt of stock. bring to boil, reduce to simmer. Cook partially covered for 1 hour. Add chopped basil, 1 T of butter to mount and top with strong cheese if you like.

Tofu Picatta

Ingredients:
tofu
vegetable stock
capers
1 onion
2 lemons
garlic to taste
mushrooms
sugar
corn starch

Just a basic pan fry on your tofu. I'd go with Panda brand if you can find it in your area. If you're worried about the frying you can bake it.

In another pan cook your onions, mushroom, garlic. once they're cooked to your liking add a cup of vege stock. juice both lemons into the pan. add your capers. I usually dump out half of the brine, adding the rest into the sauce. cook down, adding sugar to taste to balance out the acidity. if sauce isn't thickening up to your liking add corn starch or flour.

Serve over couscous, rice, mashed potatoes. noodles, etc.

just put the tofu over the bed of your choice and pour sauce over the top.

it's totally awesome.
