guy1 -  Made some cider braised short ribs this weekend.  They turned out pretty tasty for a first run.  I'll make some adjustments on the recipe next time around.

As far as cooking on low vs. high, does it really make a difference or is it simply a time issue?


It definitely makes a difference in the tenderness factor. Also stuff turns out less dry tasting. At least that's my experience.

Mix6APlix - crunchysavior is correct. Low and slow will break down the connective tissues more if you do it slowly, thus resulting in a more tender piece of meat.

How did it turn out?

It turned out great...i shredded the meat for the last hour of cooking then removed from liquid

 That's a great call.  Might try it this weekend.  Either that or a pork recipe of some kind.

Cbass -  I made an amazing Coconut Chicken Curry in the slow cooker the other night.  Served it with basmati rice and Garlic Naan Bread

3 lbs chicken breasts
1 can coconut milk (14 oz)
1 can tomato paste (small one)
1 red pepper (chopped)
1 onion (Diced)
1 piece ginger (1 inch peeled and sliced)
1 teaspoon Liquid Smoke
1 teaspoon kosher salt
1 teaspoon black pepper
3-4 Tablespoons curry powder
2 Tablespoons Sriricha sauce
1 sweet potato (peeled and cubed)

Place coconut milk, tomato paste, liquid smoke,salt, pepper,  red pepper, onion, ginger, curry powder, and sriracha sauce in blender and blend untill smooth
Place cubed Sweet Potato in bottom of Crockpot, place chicken breasts on top, pour blended sauce on top of chicken and cook on low for 4 hours.  remove chicken and shred with forks, after chicken is pulled, place back in crockpot and cook on low for 1 hour...

 What's your guys take on how full to fill the pot with liquid?  Is it ideal to have the meat completely submerged?  Half way?

i prefer less liquid... the veggies, especially onions, sweat a lot and there is plenty of juice that comes from the meat.  the less liquid equals a more tasty gravy

also flip the meat half way through so both sides get cooked in the liquid and wont get dried out

I made the Korean beef this week but added a cup of beef broth and some potatoes. Shredded the beef and let it sit on low for a hour to soak up some of the juice before I drained it.

Turned out pretty good, but a little too sweet for my taste. I added in about four serranos on top of the jalapeno with half of them de-seeded and it's not really spicy at all. Going to turn that up next time. The potatoes turned out tasting like sweet potatoes after it was done.
