Ok so I'm 19 in a week, but I'm really slim and tall enough to know that my body is going to catch up with my height.  I'm a big Bruce Lee fan and my favourite line by him is "Be Water" so I want to have it in chinese hanzi down the center of my back.  From what I've read its only two chinese characters.

Now here are my problems:

1) When I get bigger, will the tattoo stretch?
2) How can i find someone who knows the language well enough that i'm not tattooing googles translation to my back?

1) Yes, but the less muscle, more skin/bone parts will stretch less. Of course, those places tend to hurt more.
