So I had lunch at a Peruvian restaurant down in the Strip in Pittsburgh a week or so ago. They had this amazing hot sauce that I successfully replicated at home.

2 bunches of cilantro
3 -4 jalapeños (seeds and vein in)
1 cup olive oil
2 cloves of garlic
1 tsp salt

Combine all the ingredients into blender, add half of the oil and begin to pulse. While pulsing add the rest of the oil. Place in a jar or condiment bottle and refrigerate.

This sauce is flavorful on the front and the heat gets you on the back end. I also made a version with habanero and it was better. Have fun! Phone Post
