About 4 months ago I took a job as a grunt on a vineyard. Through various circumstances I have now been promoted to assistant winemaker. I'm heading to work now but can answer any questions when I get home around 6 est.

Red wine has the reputation of being able to age much longer than white, why is that?

But I've read that some collectors of Château d'Yquem hold verticals of fairly old bottles.

That seems contradictory to the conventional wisdom above
