I'm 6'2 210 pounds. Haven't worked out for 6 months. Lifted for 8-9 years prior to that.

Here is my typical diet:

7:30 AM - In my BlendTech blender I use 1 banana, 1 orange, 2 handfuls baby Spinach, 2 cups of frozen vegetable mix of Cauliflow, Brocolli, Carrot and 1 cup of frozen mix of blueberries, rasberries & blackberries. I also add about 8 ounces of water.

Also, eat 2 eggs scrambled.

10:30 AM - Smart ONes Chicken Enchilada Suiza (nutritional fact):
Serving Size 1 package (255.0 g)
Calories 290 Calories from Fat 46
% Daily Value*
Total Fat 5.1g 8%
Saturated Fat 2.0g 10%
Trans Fat 0.0g
Polyunsaturated Fat 1.0g
Monounsaturated Fat 2.5g

Sodium 640mg 27%
Total Carbohydrates 49.0g 16%
Dietary Fiber 3.1g 12%
Sugars 4.1g
Protein 11.0g

Also eat 2 cuties oranges, 1 banana and 1.5 servings doritos. 16 oz bottle of water.

3:00 pm - eat 6-8 baby carrots with 3 teaspoons of Skippy Peanut Butter & drink same Juice concoction I referenced a 7:30am above.

workout from 4:45-6:15 - weights and 20 min walking treadmill

7:00 - Costco chicken rotisserie chicken - portion size = bit smaller than my hand size. Parisian salad (2 handfuls). Drink 30 oz water.

11:00pm go to sleep.

Sometimes I have 1 scoop of protein w/ milk before sleeping.

========================================

How does the diet rate for muscle building? I'm trying to drop back to 200 pounds and get back my athletic/muscular build...what do I need to do different?

OP to you want to be gaining 1-2 pounds per week.

Go to the link below and enter your details into the calculator and it'll tell you how many calories you should be eating and the macro nutrient (carb, protein, fat) breakdown you should be aiming for.

You're trying to serve two masters here- losing fat and gaining muscle. It just won't work outside of beginners. You're diet is way too light for building any appreciable mass and you don't have nearly enough meat in there.
