Blueberry Bacon Pancakes

  • Servings : 1
  • Prep Time : 5m
  • Cook Time : 8m
  • Ready In : 13m

This recipe only serves one. But obviously you could double/triple/whatever it for more. I suggest using a crepe pan instead of the crap pan I used… but, unlike most times I make pancakes, this worked out well anyway. Very tasty!!

Ingredients

  • 40g of bacon (about 2 strips)
  • 2 eggs
  • 30g of coconut flour
  • 30g of blueberries
  • 3 tablespoons water

Method

Step 1

Chop up the bacon into pieces, not too small. I did them about 2cm pieces and cook it. Then take half out of the pan.

Step 2

Mix the eggs, coconut flour, blueberries and water in a blender or whatever you use to mix up batter.

Step 3

Pour half the batter into the pan over half the bacon and cook slowly and then flip when it starts browning around the edge.

Step 4

Repeat with the rest of the bacon and batter. You might want to add a bit of coconut oil, or bacon fat before pouring in the batter on the second pancake. (The first pancake cooks in the bacon grease anyway. Yum!)

I make these paleo pancakes every Sunday morning (still have some leftovers in the fridge right now, they make easy re-heat breakfast for my son).

I think they are better than any regular pancake I've ever had.

http://nomnompaleo.com/post/9199871590/cinnamon-and-coconut-pancakes

•2 large eggs
•3 tablespoons full fat coconut milk
•½ mashed ripe banana (about 2 tablespoons)
•½ teaspoon apple cider vinegar
•½ teaspoon vanilla extract
•1½ tablespoons of Bob’s Red Mill organic coconut flour
•½ teaspoon cinnamon
•¼ teaspoon baking soda
•1 small pinch of salt
•ghee or coconut oil (for frying)

Works best as silver-dollar pancakes (use about a table spoon per pancake).

I often substitute half & half or milk (but I use less, adding slowly until I get right texture) if I don't have coconut milk handy.
