In Japan they say that eel is supposed to improve your stamina , especially during summer, but is that based on scientific research or is it simply folklore? I find that most unagi-don are rather high in fat, and quite expensive, are they worth it?

Folklore. Gennai Hiraga (18th century), a naturalist, inventor and scientist (early experiments in Japan with electricity) had a friend who had an eel shop. He recommended he advertise eel as being good for stamina in summer. With Gennai Hiraga's name backing the claim, it was--and continues to be--a successful marketing campaign. If you're ever in Shikoku, you can visit his home on the outskirts of Takamatsu, which houses a small museum of some of his lab items. It's not too far from the widest pine tree in Japan, supposedly planted by Kobo Daishi.

I think working out is good for stamina, and eel is good for eating IMO. BTW, Schwarzenegger when he was a bodybuilder was asked what his secret was. He said he eats bull's balls. People started importing bull's balls from the place where Arnold was getting them from in Austria. As it turns out Arnold had stock in the company that was producing the bull's balls and he made a lot of money. I am sure if there was an Austria ground in the 1970's there would be a thread that asked "Bull's Balls(Bull's Balls) good for body building? In that thread there would be a post about Gennai Hiraga.
