 Sorry to revive a 4 year old thread, but am just about to buy myself a quality chef's knife, and wondered if anyone had any updated info?
 
Tried a few in a shop (not a wide selection, admittedly) and quite like this

 Looks pretty good but I don't know anything about it. The specs are great but I'd want to feel it in my hand.

theres just something about Wusthofs.

i cant use anything but Wusthof knives on a regular basis.

not even Jwilling Henckels that are pretty similar.

Henckels doesnt feel good in your hand but Wusthof does.

It arrived today. Perfectly weighted and balanced. Absolutely over the moon about it. Very happy indeed.

Did a quick test with the Senkou and my old knife slicing carrots. Had to put some pressure on the old one, but this almost falls through. It's like a kitchen lightsaber
