The fatty is Great cooked next to the ribs or shoulder to sample while all else is cookin. Takes about 2-3 hours. You can glaze it with your favorite sauce if you wish. Just slice it. You can put a slice on a biscuit with mayo & a slice of tomato. For breakfast, on an English muffin with an egg over easy and a V-8. Crumble some of it up and make ABT's. What are ABT's? Atomic Buffalo Turds. Jalepenos stuffed with a cream cheese based stuffing. Use plain cream cheese or mix the cream cheese with anything you like. Sausage, olives, shrimp. Use your imagination. Wrap the pepper in a piece of bacon and skewer a few on a stick. Then cook them in the chamber until the bacon is cooked. About 90 mins or more. These are a great appetizer!

alpo shouldhave his own grilling show on the food channel, IMO! Fuck Bobby Flay! :P I'm gonna try this thsi weekend.. I have a smoker that I've never used as one.. only used it for a grill (actually it was some cheap 3-in-1 thing smoker, grill, something.

alpo, Where did you get that big ass round water pan? I've been casually looking around, but only find the 9" cake pans. Is that a 16-18" round pan?
