When I was doing contract work in Iraq, some of our locals would bring in plain bread. I loved that stuff!

Did it look like this? This is traditional Iraqi bread. Its great tasting and prob my favorite bread.

Pretty much, yeah. Sometimes it was flatter and more irregular in shape, but I'm pretty sure they (it was mostly women that worked in my building) were making it at home & bringing it in.

I'm kinda neither here nor there about bread in general (I appreciate a warm roll with butter as much as anyone else, but I'd be more than fine if I never had bread again).

However, I miss the hell outta this stuff!

If I had access to that I would probably experiment some. Maybe put some cheese and pepperoni on it and see how it tasted.

i'm with you ... give it to me like once a month, but for daily usage i want my bread plain with butter on the side

What is Zaatar made of?
Za'atar as a prepared condiment is generally made with ground dried thyme, oregano, marjoram, or some combination thereof, mixed with toasted sesame seeds, and salt, though other spices such as sumac might also be added. Some commercial varieties also include roasted flour.
