meh, I kind of fucked it up  It was too dry.  Last one i did was amazing.  This one too dry.  I'm so inconsistent with brisket.

On another note, the bacon panko smoked mac and cheese was fantastic.

I tried a grilling season without the wrap at all and it was way too difficult. It required constant spraying to get close to the juiciness of wrapping with a mich thicker fat cap. And there was very little wiggle room for error.

So, I've been wrapping since and it's a requirement for my technique now.

So, I've been wrapping since and it's a requirement for my technique now.


Every time I wrap it fucks up both the bark and the seasoning.   Next time Im going back to injecting first, then getting a good bark for 6 or 7 hours, then put it in one of those Sam's disposable pans with a lid.  That way the foil doesn't touch the bark.  Then as it rests I'm going to make an aus jus sauce with beef bouillion and put it in the pan as it rests for 4 hours.

^^ Also, I did a simple flat last time without wrapping and it was amazing.  moist and juicy with a great bark and not dry at all.  But with the smaller flat it was done in 8 hours

Just put one on the weber kettle.   Decided to go back to that for a change away from my electric.   Might have screwed up but fingers crossed
