Jesus those look good! How'd you cook them?
Salt / Pepper - used Worcestershire sauce to bind
smoked for about 6 hours wrapped with butcher paper for about at hour when it had the right color, let it come up to 200ish and pulled it and left in cooler wrapped again for an hour.
super tender, this time when I cooked them I left the water pan directly under it while it cooked.
I had a brisket I was gonna do this weekend but I think I’ll do it for next weekends UFC.

hey what are you fagoons doing for rest times. i've been noticing, the longer i rest, the better my food. for steaks, i'm putting them in the oven on warm for 20 minutes. briskets - 3 hours minimum (wrapped in towels in a cooler).
anyone playing around with rest times or parcook / fast cook for serving?
I’ve had my brisket on since 7am, hit a stall around 3 and it’s only at 170 right now.
