I kinda feel I'm seeing & saying the same names on all three topics/threads (Most innovative, Most replayable, Best), so I guess I'm just gonna second:
GTA3
SimCity
Ultima
Descent


Will acknowledge these even though I'm not so fond of them:
Wolfenstein 3d
Quake


Didn't see these mentioned but worth mentioning (apologies if I missed them):
NBA Jam
Streefighter 2


& a couple I will add without regard to whether I dig them:

Overall, it's GTA3 that ticks the most boxes for everybody, yeah? I mean, putting aside your niche preferences, it's the Coca-Cola of video gaming, right?

dude when Super Mario 3 came out for the original NES, it was a mind blower.

NBA Jam is a great bring up.

 

Fairly sure that came out before Mutant League Football and JerryGlanville's Pigskin football. 

 

I know it came out before NFL Blitz. NBA Jam set the blueprints for NFL/NBA Street type of games

Yeah the ability to get the racoon suit and spin the tail to fly up in the sky was pretty innovative at the time.

It also was the first time I saw cool people excited to play (& watch others play) video games in public.

I suppose I should have said "normal people", but I'd thought that it would be obvious I was gauging relative to me.
